Boiled Kos ata - 400g
Knorr seasoning cube - 1
Sliced onion - ½
Chopped garlic - 2 cloves
Sliced green chili - 1
Pandan Leaf - 1 piece
Curry leaves - 1 sprig
Chili powder - 1 tbsp
Roasted curry powder - 1 tbsp
Turmeric - a pinch
Grated Coconut – 10g
Raw Rice – 10g
Water - 1 cup
Thick coconut milk - 1 cup
Oil to deep fry
Salt to taste
1. Slightly fry kos ata in hot oil. Drain and set aside
2. Dry fry the raw rice and the coconut and grind together to make a powder. Set aside.
3. Into a pot add oil and heat. Then add onion garlic, green chili, pandan leaf and curry leaves. Sauté till fragrant. Then add the fried Kos ata, chili powder, curry powder and water and bring to a boil.
4. Then add the coconut milk, 1 or 2 tablespoons of powdered coconut and rice mixture and bring to boil. Finally add the Knorr seasoning cube and season to taste with salt. Mix well and serve hot
Add a handful of moringa leaves for more flavor.
