300g of Carrot grated
70g of Knorr Real Coconut Milk Powder (semi thick)
2 cups of water
100g of Sugar
3tbsp of Ghee
½ tsp of Cardamom Powder
20g of Cashews

1. Heat 2 tablespoons of ghee in a heavy bottomed pan. Add and fry the cashews until golden brown colour. Take them out of the ghee and set aside.
2. Add the grated carrot to the same pan and sauté until the raw smell disappears or for 5 minutes. Keep frying till it shrinks.
3. Dilute Knorr Real Coconut Milk Powder in water make a semi thick coconut milk. Add the coconut milk and cardamom powder and mix well. Cook over a high flame until the coconut milk evaporates. It may take 10 – 15 minutes.
4. Add the remaining ghee and sugar and mix well. Reduce the flame to medium. Stir until it forms a mass and leave the sides of the pan. When the halwa leaves the sides of the pan, turn off the flame.
5. This will thicken more as it cools. Add the fried cashews garnish with more cashew and serve.
