Coconut Panna Cotta

Serves 4 – 6

2 teaspoons gelatin

2 tablespoons water

50g Knorr Real Coconut Milk Powder

50ml water

300ml heavy cream

100g granulated sugar

1 teaspoon vanilla extract

Pinch of salt

1. Sprinkle the gelatin over 2 tablespoons of water in a small bowl. Stir well and let it sit for 5–10 minutes to bloom.

2. Mix the Knorr coconut milk powder with 50ml water to make thick coconut milk. Add it to a saucepan along with the heavy cream, sugar, vanilla extract, and salt. Heat over medium heat until just below boiling, stirring constantly.

3. Melt the gelatin in the microwave for 10–20 seconds until clear. Stir it into the coconut milk mixture until fully dissolved.

4. Strain the mixture into ramekins and refrigerate until set. Serve chilled with strawberries and desiccated coconut.
