Cooked rice 500g
Knorr seasoning cube 1
Kimchi 200g
Onion chopped 1/no
Garlic chopped 2cloves
Ginger chopped 1 inch piece
Margarine 10 g
Spring onion leaves a handful cut in to 1 inch pieces
Can use any meat (optional)
Diced tomato or red bell pepper for garnish (optional)
Recipe for Kimchi:
Chinese cabbage or Regular Cabbage 1kg
Spring Onion cut lengthwise 1cup
Raddish Julienne 3/4cup
Carrot Julienne 1cup
Gochugaru Chilli 1/2cup
Ginger minced 20g
Garlic minced 20g
Salt as required
Rice flour/corn flour 2tbsp
Fish Sauce or 2-3tbsp
Soy sauce
1large onion pureed
Leeks chopped ½ cup
Sugar 2-3tbsp
Water 1cup
1. In a pot melt the margarine,then add ginger garlic and onion.saute till fragrant.
2. Now add the kimchi and the knorr seasoning cube.mix well
3. Add the cooked rice.mix well season to taste with salt . sprinkle spring onion leaves to garnish and serve hot
4. Kimchi Recipe
5. Take the Chinese Cabbage/Regular cabbage and trim the discoloured outer leaves.Cut the cabbage lengthwise into quarters and remove the cores. Chop it up into bite size pieces.
6. Soak the pieces of cabbage in cold water and put the soaked cabbage in a large container.Sprinkle salt.
7. Every 30 minutes, turn the cabbage over to salt evenly (total salting time will be 1½ hours). 1½ hours later, rinse the cabbage in cold water 3 times to clean it thoroughly.Drain the cabbage and set aside.
8. Make porridge
9. Put 1 cups of water and rice flour in a pot and mix it well and bring to a boil. Keep stirring until the porridge makes bubbles (about 5 minutes).Add 3tbsp of sugar. Stir and cook for a few more minutes until it’s translucent.Cool it down.
10. Make kimchi paste:
11. Place the cold porridge into a large bowl. Now you will add all your ingredients one by one.Add fish sauce, gochugaru chilli pepper flakes, crushed garlic, minced ginger, and pureed onion. Add green onions, chopped leek, Korean radish, and carrot.
12. Mix all ingredients well and Mix the cabbage with the kimchi paste
13. Put the kimchi paste in a large bowl and add all the cabbage. Mix it by hand. Put the kimchi into an air-tight sealed plastic container or glass jar for storage. Use when needed
